The Hospices de Beaune is an annual charity auction and it is always highly prized to win the bid. Labels by the Hospices (the Hospital) are only issued in an exact quantity to the number of bottles that can be bottled from the cask that achieved the highest bid. The labels are immediately recognized by Burgundy connoisseurs as wines and brandy that was bought at the auction. This specialty of Burgundy is obtained by distillation of the solid parts (stems, seeds, skins) resulting from the pressing of Burgundian grapes after the harvest. Distilled with care, the brandy is then aged in oak barrels where it acquires roundness and smoothness, while retaining its aromatic characteristics that made its reputation. Marc is essentially French grappa and in this case it is aged and achieves notes from the burgundy dregs and the special oak casks it is aged in. Each vintage will yield a unique and singular brandy flavor.
