We make our whiskey from craft beer. Finished, made-for-drinking craft beer. The result is something truly unique. Each expression we distill takes on the essence of it's parent beer, sometimes subtle, sometimes profound. Yet it remains distinctly a whisky, perfect neat, with a rock, or in a cocktail. Another benefit of our process is time. Since we use finer ingredients, our whiskies need less time in the barrel. We don't wait decades for our ideal result, and in most cases can reach our goal in under two years. That means you get several expressions a year.
Frambooze is our newest collaboration with Libertine Brewing Co. We brewed 60 barrels of Framboise Golden Ale at Libertine in San Luis Obispo. After fermentation the beer was trucked to Seven Stills in San Francisco where we distilled and aged the whiskey in new American oak. The matured whiskey was then moved into Libertine Framboise sour barrels where it was finished on fresh raspberries for an additional four months.
