Corbin Cash Whiskies

The organic matter left in the soil after each sweet po­tato harvest means our Merced rye is grown in a com­pletely different terroir than midwestern grains, where the same fields are used repeatedly for grains only. As a result, the flavors created in our rye whiskey are completely unique and reflective of California’s Central Valley. Whereas most American rye whiskies are characterized by a spicy, herbaceous character, our Merced rye is re­nowned for its earthier notes, compounded with flavors of sweet oatmeal and a dusty, graham cracker finish.

Corbin Cash Sour Mash Bourbon

While our whiskey focus has long been our farm-to-glass Merced rye whiskey, a number of customers asked us if we could make a true Bourbon mash bill using the same processes. After reaching out to some local California corn farm­ers, we put together a 70% white corn, 25% Merced rye, 5% malted barley recipe to create our first 4-year-old sour mash Bourbon.
